VIOLATION 1) The floor, wall, and ceiling surfaces where the pizza preparation table is located is not smooth and easily |
cleanable. If this area is to be used as part of the food operation it must meet the food regulations. |

(A) Indoor areas - surface characteristics |
|
(1) Except as specified in paragraph (A)(2) of this rule, materials for indoor floor, wall, and ceiling surfaces |
under conditions of normal use shall be: |
|
(a) Smooth, durable, and easily cleanable for areas where food service operation or retail food establishment |
activities are conducted; |
|
(c) Nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, |
warewashing areas, toilet rooms, mobile food service operation or mobile retail food establishment servicing areas, |
and areas subject to flushing or spray cleaning methods. |

VIOLATION 1) There is insufficient lighting in the pizza preparation area. It must be at least fifty foot candles in all food |
preparation areas and properly shielded. |

(I) Lighting - intensity |
|
The light intensity shall be: |
|
(3) At least fifty foot candles (five hundred forty lux) at a surface where a food employee is working with food, |
utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. |

VIOLATION 1) Observed pizza boxes stored on the floor in several areas. All single use containers must be stored off the |
floor at least 6 inches as protection against contamination. |

(E) Equipment, utensils, linens, single-service articles, and single-use articles - storage. |
|
(1) Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be |
stored: |
|
(a) In a clean, dry location; |
|
(b) Where they are not exposed to splash, dust, or other contamination; and |
|
(c) At least six inches (fifteen centimeters) above the floor unless the items are kept in closed packages on |
dollies, pallets, racks, and skids that are designed as specified under paragraph (II) of rule 3717-1-04.1 of the |
Administrative Code. |
